Pumpkin Gooey Butter Cake - Happy Birthday Sis

About 3 or 4 years ago, I decided to make my sister a gooey pumpkin butter cake for her birthday cake.

She had gooey butter cake before and loved it. Plus, she is a pumpkin freak and loves just about anything containing pumpkin - so I figured she would love it. And she did !! So every year since then, she has requested this cake for her birthday. It is pretty simple to make and it is very good.

Paula Deen's Pumpkin Gooey Butter Cake

Cake
1 (18 1/4 ounce) package yellow cake mix
1 egg
8 tablespoons (1 stick) butter, melted

Filling
1 (8 ounce) package cream cheese, softened
1 (15 ounce) can pumpkin
3 eggs
1 teaspoon vanilla
8 tablespoons (1 stick) butter, melted
1 (16 ounce) box powdered sugar
1 teaspoon cinnamon *
1 teaspoon nutmeg *
* This year I substituted the cinnamon and nutmeg with pumpkin pie spice

Directions
1) Preheat oven to 350.
2) For cake: combine cake mix, egg and melted butter with mixer.
3) Pat the batter into a lightly greased 13x9-inch baking pan.
4) For filling: Beat the cream cheese and pumpkin until smooth.
5) Add the eggs, vanilla, and butter, and beat together.
6) Add the powdered sugar, cinnamon, nutmeg (or pumpkin pie spice) and mix well.
7) Pour pumpkin mixture over cake batter, spread evenly (save a little on the spatula to taste for yourself)
8) Bake 40 - 50 minutes. Do NOT overbake - it is a gooey butter cake after all, you want it to be a little gooey, plus it firms up a little more after it cools. I bake it exactly 40 minutes.
9) Give to sister and watch her enjoy - Happy Birthday Sis !!!
